Culinary Explosion- What happens when we put talented brands and minds together
SIAL Middle East happens every year in Abu Dhabi. It's one of 9 international food exhibitions under the SIAL name, celebrating food innovation. What makes this one different?

For the first time, Filfood Asia Gulf was commissioned by the Center for International Trade Expositions and Missions (CITEM) to conduct live cooking demos and food tasting sessions to buyers and visitors under the Food Philippines industry brand. CITEM is the export promotion arm of the Philippines' Department of Trade and Industry (DTI).
The pavilion, inaugurated by Her Excellency Hjayceelyn M. Quintana, Philippine Ambassador to the UAE and H.E. Abdulgani M. Macatoman, DTI Undersecretary Trade Promotions Group, was aesthetically designed by CITEM and proudly displayed top Philippine food exports that were derived from or produced out of indigenous coconut, banana, cacao and other fruit and natural produce.

Filfood Culinary Team lead by Halal Chef Julyss Albor, Brand Chef Edward Dinoso and Pastry Chef Roderick Hinampas used their innovative skills in developing the curated menu from savory to sweet dishes using a combination of various Philippine food products and ingredients that were showcased in the Food Philippines Pavilion.

The products included coconut wraps and jerky, fresh squeezed Calamansi extracts (Philippine Lemon), extra virgin coconut oil, Philippine superfood powders like Malunggay (Moringa), pre-mixes, banana chips, peanuts and chocolates were introduced to food industry professionals, importers and distributors.

The goal was to demonstrate the use of Philippine products in internationally palatable dishes. Above you find a new version of the local appetizer dish called Lumpiang Sariwa or fresh Spring rolls, made with Nuco Coconut Wraps topped with a sauce using Mama Sita Oyster Sauce and sprinkled with Wow Mani Peanuts and Instayum Mushroom Chips.

Filfood was pleased to interact with some of the Philippines' award-winning producers such as MS3 Agri-ventures who harvest Philippine Cacao and produce their own chocolate. They were awarded silver and bronze medals for their sophisticated chocolate products in the Academy of Chocolate Awards in the UK and were one of the finalists for the SIAL Innovation Awards this year.
